I treat my Red Beans and Rice like its a sacred dinner, straight up holy trinity, smoked pork green onion sausage, a small bone in ham or butt, and if my wife's not looking some smoked ham-hocks.

I found smoked ham shanks at albertsons. They season the same as hocks but have more meat than fat. like them a lot more than hocks.
