Red Beans Thursday
Who says you can only cook red beans on Mondays? Better yet, who says you can't eat Red Beans and Rice any or every day of the week? Actually I was supposed to cook these this past Monday but we had a Red Bean Dinner fundraiser at St. Francis Xavier and so I deferred to today to cook these four pounds I picked up last week. http://i1183.photobucket.com/albums/...4/DSC04759.jpg So of course I forgot to put them to soak overnight but I figured four hours will do this morning. http://i1183.photobucket.com/albums/...3/DSC04854.jpg Big cook today so I brought out the big boy! http://i1183.photobucket.com/albums/...3/DSC04863.jpg Seasonings chopped and time to brown the sausage. http://i1183.photobucket.com/albums/...3/DSC04864.jpg No dried bay leaves so I went to the yard and plucked some from the tree and while out there I thought I heard something in the fridge in the patio shed calling my name. Sure enough there was an ice cold Abita Golden screaming for me to open and drink it. I treat my Red Beans and Rice like its a sacred dinner, straight up holy trinity, smoked pork green onion sausage, a small bone in ham or butt, and if my wife's not looking some smoked ham-hocks. Sig, thx for posting I always enjoy your stuff.[ I found smoked ham shanks at albertsons. They season the same as hocks but have more meat than fat. like them a lot more than hocks. |
