Smoked Hen, Sausage and Andouille Gumbo

Yall remember those smoked hens I brung home from Sam's new smoke house? Well one of them wound up in Peggy's gumbo pot the very next day. Here is the picture filled post of how we made it including how I make a gluten free roux that she can eat.:

Glad yall liked it the gumbo wás amazin' smoking the hen adds a wonderful eliment to da ole chicken gumbo.
