Default Cajun Fish Tacos

I've been wanting fish tacos for a while so yesterday evening I made them but put a lil Cajun twist on it.
The Cajun twist started with the fish I used. Gar fish! Yep, alligator gar. I used a local seasoning, Frank Davis' Bronzing seasoning and added a lil ground cumin with that. Then onto a hot grill!

Of course an ice cold beer is a handy thing to have whenever your standing around a hot grill!

These were gar fish steaks.

Putting the tacos together made me thirsty for some "horny toes" so of course......

Plated and ready to eat!

Gar fish tacos with shredded cabbage and a limey cilantro crema, Mexican rice and black beans(I for got the queso fresco until after I took the picture).

Excellent meal!

Looks good. The "horny toes" is just a cold shot of Hornitos with a lime wedge correct?

No, unfortunately I bought those gar steaks in Port Barre.
Just cut nice thick steaks from the thick tail area, batter like catfish and fry. You'll love it! Especially on a sandwich.

My work neighbor across the hall from has an Uncle that fishes Garfish. I may but a few pounds with him so I don't have to mess with it. He has cleaning them down to a science. Takes him under 2 minutes to clean a 30lb gar..... maybe less than that.

I'd like to see his technique. I've cleaned several, and I regret it every time...lol
