650 degree sear, 40 mins each side . Move roast to pan and foil up tight for another 4 hrs at 300 degrees ...
Bring inside and let it set for 30 mins still foiled up, then uncover and its on !!! |

I bet it taste great. I am a firm believer in bag cooking. I do ribs similar accept for the shred part.

Cut the back out of a whole chicken, season up with lots of olive oil and herbs, flatten out like a pancake ... Good stuff
