Red Beans & Rice and Cornbread

If eating Red Beans & Rice on Monday were a crime I'd definitely be a repeat offender. It's a good thing it's not a crime though because a big portion of the Louisiana population would be in jail. You know what I bet they'd serve for dinner on Mondays? Red beans and Rice!!!!. Lol......

I called the wife during the afternoon and asked her to bake a cornbread to go with tonight's Red Beans that I cooked yesterday. She's a good wife!

These came out really rich and creamy yet still had whole beans that were perfectly cooked. Cooking them the day before and eating them the next day is the way to go. It allows(at least with mine)more of the smoky flavor from the sausage, diced tasso and seasonings to marry more perfectly than a human marriage can become.
Once again a little of my homemade pepper relish on the side.
