Default Quick Crawfish Omelet

This morning while I was conducting important stuff on the computer(posting stuff like this), my lovely wife was in the process of making crawfish pies using leftover crawfish from a crawfish boil a few weeks ago. I asked her if she could pit a few aside for me to make a crawfish omelet and so it was. Lol.....
I scrambled a few fresh eggs from the yard(I know ....., but some have said that if I don't mention that they are "fresh from the yard" that they assume I was using store bought eggs)and made the omelet using some shredded Colby and Jack cheeses and more crawfish tails than I needed. Add some fresh chives from the yard and a little extra shredded cheese and it was perfect.
We had a few biscuits left from during the week that I threw into the toaster to warm that we perfect with this omelet.
