Zuke's n carrots

Experimenting today . Zucinni ,carrot , ground meat , cook down with onion , shallot , bell pepper . throw in some some cheddar cheese and top with parmeson and lil bread crumb for crust.....Guess I'll find out how it is in about an hour....

Came out great...Going in my recipe file....Even thru in a piece of garlic bread for my wife....

that would make a great stuffing for about anything. bell pepper, fish or even jalapenos.

My mom makes one similar to this with egg plant. It gets demolished every time she makes it.
