My Uncle makes big Jambalays like that. He uses one with a handle that has a "V" in it which enables him to dice the whole onion at once. All you do is cut off the top and bottom peel it and stick it int cutter pull the handle and it's cut. Very useful to chop onions. I think his has a 1/4" dice though.

His looks like this.
He can mount it on the wall or flat on a table, one man cleaning onions and one diciing.......you can knock out a 50 lbs onions in under 30 minutes.
