Any oil with high smoke point will work i do 90 seconds on side one, 60 seconds on side two, then top with butter garlic sauce and finish in the oven for a couple minutes at 425 depending on the thickness of steak. I eat mine rare and the cast iron is my favorite way to cook a steak.
