It's not hard to take the head and water jacket cover off. The problem is corrosion. If you feel the bolt getting tight don't force it. Soak the bolt and area in kroil oil for several hours or overnight,spray every couple hours. Putting it back together is easy just have to use a torque wrench. You should be able to find the torque specs online. When was the last time the water pump and thermostat changed?

Very good advice.

If the bolt gets tight when trying to take it out, screw it back in some and then try backing it out again. Work the bolt back and forth, but don't "force" it to get it to come out or you may break off the bolt.

If it is still tight.....soak it some more and repeat.

If one of the bolts does not want to even start to come out...... try "taping" [give it a fairly firm hit] on the head of the bolt. The vibration of the "tap" can break the bolt threads loose and allow you to start unscrewing the bolt.
