The Roux (Cooking/BBQ/Recipes) What good is a cajun site without a cooking and recipe forum?

You want a rich sauce or a tomatoe sauce.?
You can Melt a stick of butter ,Add 2 Tbsp of olive oil. Throw in a handful of finely diced onions, sweat them down. Add a cup of chopped pecans. cook till pecans start
to brown. add 1 cup pet milk or 1/2 &1/2 stirring to mix. once this is hot you can add 1 cup crab meat if you like . If you add crab cook for 5 min and pour over fish. Top w/ diced green onions and serve.

For a more non traditional sauce,
heat 1/8 cup olive oil add 1/2 cup thousand island salad dressing heat and mix well .
Add 1/2 bottle of tiger sauce.stir well. spoon over fish top w/ toasted cashews and green onions.

If you want the sauce spicy you can add finely diced jalapenos to either . The 1st add it b4 the onions . The second add them
before the thousand island dressing.
