Yesterday we couldn't think of what we wanted for dinner last night. so I took some catfish fillets from the freezer and decided to make Catfish Amandine. Just needed to pick up some sliced almonds. I had a container of Richard's Rice Dressing mix so dirty rice and some green beans I had made not long ago and froze would be sides. Oh, and some drop biscuits too.

For such a delicious dish it couldn't be more simple.
