Meatloaf Night!

Last night was meatloaf night and it was a good one! As I've done the last few times I did meatloaf this one too was cooked on the Keg. I've got it down pretty good where we don't end up with a greasy or dry overcooked meatloaf the way I do it. Cooking it on the Keg I use a disposable aluminum pan lid to cook the loaf on with holes on the side of the meatloaf to drain unnecessary fat and juices on to a sheet of heavy duty aluminum foil I use as a diffuser that way there's no grease fire flareups or dousing of the lump charcoal.

Meatloaf formed and chilled to hold it together.

Sauced and almost done!

Served with......... of course mashed potatoes and peas and carrots.

Deliciously tender and moist!

Of course there will be meatloaf sandwiches to come................. :D:D:D:D:D

Same here. Somehow I always end up cooking whatever he post. Seeing those pictures and his descriptions gets me jonesing for a bite! Although, I'm sure his food taste way better than mine. Without his inspiration, it's been pretty dull in my kitchen lately.
