Why do mullet jump out the water ??????

same as pogies, to escape something.

sometimes its just the sound of your motor but usually its a predator after them

now if your just talking about them singles that seam to jump just for fun, im told that's how they shake off parasites bugging them as their way to scratch themselves

I read where they jump to help get oxygen because they stay at the top of the water column where the oxygen is less than deeper columns. They have something in them that holds the air till they need it.

I can tell you one thing I've determined when I see mullets jumping: Whatever direction they are jumping from, the tide is following them 45 min. behind. Check it out the next time you see them jumping.
