We finally had a chance to boil some crawfish. Between that and the yellow sodas, I'm about to pop! Now I'm just waiting for the headache in the morning.

We also fried shrimp, fries, sweet tater fries, hush puppies, and okra. But I wasn't in charge of that so no pictures got taken.

Our Good Friday evening meal.


Started out with frying thin sliced potatoes. Funny thing about these, a while back I went to the grocery and my wife asked me to pick up a bag of potatoes(she meant a 5 lb. bad. They were on sale 2 five pound bags for $3.00 so I got two bags. I knew she would say something about me overbuyinfg and they potentially going bad so I put one bag in the box of sweet potatoes out on the patio. Today when I went to slice potatoes we were out "inside". Lol..... so I went out to the patio an grabbed three perfect potatoes brought them in and washed and sliced them. Potatoes last longer outside than insde!). *;D

BTW, my wife battered the fish using yellow mustard as a binder and a good Louisiana Fish Fry batter.

Time to eat! I can honestly say this was and awesome and one of the best meals in a good while!!!!! Served with cole slaw and my homemade jalapeno tartar sauce. Mmmmmmmmmmmmmmmmmm..........................!!!!!! !!!!!!!!!!!!!!!!!!!!!!!!!!!

Yeah I see alot of people using those metal wire racks, didn't realize they made much of a difference.
And likewise about the tartar sauce. :)

Wire racks make a world of difference. Been doing that for about a decade now and the food is good and edible for hours with very little change in flavor. The LEM jerky racks/pans are the best I've found to use for that
