Yesterday's "Gumbo Balls" Test Run
Alright, so I'm making some Turkey Andouile Gumbo Balls as a test run to see how they come out. If this works I'll be bringing this to the big Endymion parade party on Saturday. It should work but I need to try some to make sure they won't fall apart. These will be battered with panko bread crumbs and deep fried. http://i1183.photobucket.com/albums/...3/DSC06277.jpg That earlier picture was a lil rough. After letting the gumbo and rice mixture cool a bit and battering them to fry here's what they looked like. First batch, six of a dozen ready to go into 370 degree oil. http://i1183.photobucket.com/albums/...3/DSC06278.jpg It's a gorgeous day with 64* temp and cooking outside means it's time for an ice cold beer. http://i1183.photobucket.com/albums/...DSC06280-1.jpg First batch done! http://i1183.photobucket.com/albums/...3/DSC06281.jpg A lil extra seasoning while they're hot and...... http://i1183.photobucket.com/albums/...3/DSC06287.jpg All I can say is UH, uhh...., uhhhhh.............!!!!! These are fantastic! It looks like these are a go for the party! Crispy on the outside and moist delicious spicy gumbo on the inside! http://i1183.photobucket.com/albums/...3/DSC06283.jpg Ths is some REALLY good seasoning! http://i1183.photobucket.com/albums/...3/DSC06289.jpg |

I use an outdoor deep fryer at 360-370 degrees. Fry about 3 minutes or until golden brown. Season lightly with a salt free Cajun seasoning and serve! Enjoy. I'm making about 180 balls today.:) |
Holy Balls !!!!!!! looks great Nate !!
