Leftover Jambalaya and Fresh Eggs
Alright, so for two days I've been feeling like crap and haven't eaten. Having seen a post on a Cajun Facebook page made me even more hungry for an old Cajun dish. So, having some leftover jambalaya and fresh eggs I just went outside and picked up about two hours ago was a no brainer. I went back outside and snipped some fresh green onions and made me a lil something to eat. Heated up some of that jambalaya with some more chopped green onions. http://i1183.photobucket.com/albums/...3/DSC04898.jpg Cracked a couple of really fresh eggs and cooked those perfectly. http://i1183.photobucket.com/albums/...3/DSC04897.jpg My bowl ready to eat. http://i1183.photobucket.com/albums/...3/DSC04899.jpg Mmmmmmmm............ Man that looks great. We do a breakfast stir fry with rice and eggs sometimes. This would be a great way to use some left over jambalaya. :)
