Chicken Etouffee
I know this is simple to you guys, but a friend asked us for a cheap gluten free main dish from Cajun country. We grabbed our video camera and made a video of cooking chicken etouffee and wrote the recipe on a blog post and posted it for them. You are soooo right dude. But that''s the problem. The person we did the post for, like my wife Peggy, is gluten intolerant. Which means no wheat as in flour as in bread etc.

I'd die if I couldn't eat bread rice or seafood.

Im no cajun but I dang sure know a fine looking plate of food when I see it. Looks damn fine as usual Cap. :)

Thanks Ducky, coming from a country boy BBQ guru that means a lot. Celiacs are allergic to gluten which is in all wheat things like bread flour etc. It's kinda hard to avoid cause it hides in lots of other stuff. I can't imagine no rice thankfully she has no trouble with that.
