Shrimp, Sausage and Chicken Jambalaya
 
I was supposed to cook this Sunday afternoon but I had forgotten that we had something to do then so I cooked it yesterday afternoon after doing yardwork and cutting grass.

The weather was perfect and enjoying a few ice cold beers while cooking outdoors made it all the better.

I started out with cooking down some homemade bacon for the drippings to cook down the seasonings.

Then it was time to brown the meats. Sausage, Andouille and chicken. The shrimp went in later.

When it was time to add the seafood stock I let that come up to a boil and added the rice and five lbs. of small shrimp.

Not a great picture but almost done. I should have drained the shrimp better as it came out a bit wetter than I like.

While out in the yard I noticed that the orange trees are loaded with thousands of blooms. Should be a bumper crop of oranges this Fall.

nice :cool:

way too many people IMHO think its wrong to mix shrimp with beef or sausage because the flavors clash but I like a shrimp and sausage jambalaya myself

Looks awesome, as usual. I think I'll make a jambalaya for supper tonight.
