Speckled Trout Filets
I have been debating with a buddy about how long can you keep trout filets in the refrigerator before you cook them or freeze them without harming the taste. I said 3 days, he said 5 days. Let me know what you think.

If cleaned right after the trip you should be able to keep them at least 3 days. The key is to make sure they are rinsed off very well and kept as cold as possible. Same goes for uncleaned fish. Very rarely I clean fish the day of the trip. The key is to not keep them in ice cold water. Keep them just on ice with the plug out the chest. Ive cleaned trout 4 days later with no ill effects. Dont let them sit in that ice chest water. Trout give off an enzyme that will make the meat mushy if left to soak in it.

I go six days on filets all the time, but after that they go in the trash. Wouldn't think to go any further than that.

Put them in a zip lock bag, put that bag in a bowl filled with ice in the refridgerator and you can keep them over a week.
Swordfish fisherman go out on month long trips and all they do is pack fish in ice.
