trout filet recipes???

We eat a lot of fish in my house. like 2-3 times a week. Just looking for something I haven't tried yet. We cornmeal fry em, shallow fry em with a thin flour crust, chinese style fish fried rice, court bouillion, blacken, baked with tomatoes and peppers and onions. Just kinda bored with these. Surely somebody out there has a good trout filet recipe that I haven't tried yet.

I like them on the grill cooked on a fish grill. Everyone has their favorite but I like to cook the fish and baste with some fresh lemon juice and pig stand, jack millers, sweet baby rays (whatever I have) and make some barbecue fish tacos with coleslaw.

Pan fry with Italian bread crumbs, then dump some fresh crawfish or shrimp étouffée on top.

Season filet. Put in a little egg wash. Press into bread crumbs. Brown in skillet with a little butter. It has become one of my families top 3 choices on meals. Don't forget to season breadcrumbs also.

Or Same as above but dump some crab and shrimp cream sauce on it.

Found a recipe on youtube that came out pretty good. Parmesan crusted fillets with a lemon brown butter sauce. Season to taste, spray fillets with canola oil, then dredge one side of fish through grated parmesan cheese. Heat cast iron over medium high heat and put enough canola oil to cover bottom of pan. Cook for about 3-4 mins. cheese side down and about 2 mins once flipped over. For the sauce drain off excess oil in pan put about a table spoon of butter in skillet and brown the butter. Once it is brown throw in lemon fillets ( peel lemon separate into wedges and then remove skin from wedges PIA.), parsely and fried capers. Once ingredients are mixed in butter the sauce is done and ready to be poured over fillets.
