Finally took the wife's grandpa up on his offer to go duck hunting for the first time in over 3 years. We came out with 8 total.... Mostly scaup, but he was excited I finally went and I was excited to get back in the marsh, and anything taste decent if you cook it long enough. Could have had a few big ducks, but I was rusty, can't call worth a crap, and them bastards move a lot faster than I remember!!! Anyways I had a great time and got to spend some quality time with the old man.

Nice....I see you took the skin off but left them whole. How do you plan on cooking them?

Yea, the skin on that scaup is freaking thick and tuff so i just skinned it. I ate some an ol boy cooked at the camp an the meat was good but i didnt care fore the skin. Doing 2 in a stew right now with carrots potatoes and mushrooms. The other 6 I'll just cross that bridge when I get there!

Matt.. Fillet the breast off the carcus.. Butterfly each breast fomr thickest part to thin.. Don't go all the way thru... Get some butter milk.. Soak them as lonf as you want..

Get some cream cheese, and jaleapeno, mix the 2 up in s small bowl..Spread some of the mixture in the open packet.. CLose it up and wrap in bacon.. Bake in oven about 25-30 minutes @ 325-350 degrees.

U want it Mid rare.. let it rest for a few minutes. Then slice it.. It's awesome that way... You can google some duck recipes on the DU website.. There is also one were you slice it up and have a orange or mango sauce on top..
