Get the smoke on!
Was amazed to see tri tips for sale at matherns here this week.
Not something we usually find in the south. got 2 and will season and shoot up w/ a lil beef injection . Smoke to 130 . hot sear on the grill to 135/140 .Great med rare . I like it as much as prime rib. |
