first smoke
 
tommorow im gonna fire up the smoker for the first time in my life..... i going to make some jerky and i got some wood ducks to smoke ..... any advice ? i know there are some hardcore smokers on SC .... so any help would be great!!!

Pecan wood. Season good. Baste every 30 mins.
Smoke a couple hours then wrap in foil and keep on heat for another couple hours.
If you don't wrap, ducks will be dry and tough.

Wrap the ducks w/ bacon then smoke. when yor wrap in foil make sure and put a little liquid in the foil. Beer or apple juice works well

Came out pretty good for my first time ....... no one has complained yet.... I'll do a few things different the next time, but hey you live and you learn!!
