Boudin Stuffed Pork Loin

This is half of a pork loin I picked up at Costco and I decided to stuff it with some boudin.



I cut a pocket in such a way that there SHOULD be no boudin squeezing out of it as it cooks.



Tied it up to keep everything intact and rubbed it done with sone Steens Cane Syrup.



The inside did get a light dusting of Mad Hunky Hot Whang Rub and the outside got a nice rub down with my Gator Bite Rub.





This will go on the Keg this afternoon for dinner. This is going to be tasty!
