Default Live well conversion

Anybody ever convert their live wells over to either an ice chest or dry storage? I have two on my boat and don't use either. Thinking of using the space instead of them sitting empty. Plus it will create more floor space.

Should I just disconnect the switches to prevent someone from turning them on and filling the boat or remove the pumps and stuff? Should I insulate them for fish boxes?

Any suggestions or advice is appreciated!
