Just Another Red Beans and Rice Monday

Another Monday here in Louisiana means only one thing when it comes to traditional Monday meals. Red Beans and Rice!
Who are we to not stick to tradition? We may not eat red beans exactly on every Monday, sometimes it might be a tuesday or Thursday but we for the most part have them once a week. Why not? they're delicious and good for you at the same time.
Well I was lucky because there just happened to be a couple of sof cornbread leftover from yesterday's brisket dinner. Mmm...... Delicious!!!
