Take the flounder to the car wash, hang on mat holder & pressure wash,takes scales off in seconds.

Yes dat works, but a wire brush is fast as well. I don't cut it down the middle. I do the boneless, pocket method. It's like filling up a meat bag with shrimp/crab stuffing.

I usta use a pressure washer to get the meat off of gator hides. Super fast. No nicks and cuts like knives.

I like to scale then filet a couple flounders. Take a small baking pan. Lay the bottom filet white side down. Then add stuffing. Place the top piece of filet over the stuffing brown side up. Basically a stuffed flounder without the bones. Works good for me. Like a big flounder pie.
