Check this topic for Sauce Piquant.
As for the meat.....start calling seafood markets. There is Ole Holdbrook Fresh Fish Market on Hwy 171 about a mile north of I-10 in Lake Charles that usually sells Turtle, not sure if they have it this time of the year. 1-337-439-9554
