Default Fish Taco Recipe

Just looked at SaltyShaws post and I am going to make those tacos tonight

Went to Islamorada a few years back and that was the big thing, but they used mahi mahi and seems like they used a beer batter for the fish and then had a cole slaw type dressing with shredded cabbage. It was purty good. I use Louisiana fish fry for my fish, what are some other good tidbits of info for making fish tacos? Dang I am hungry

Just made some last night with red snapper. I used a lime juice based marinade. Grilled the fish and served them in corn tortillas with a roasted tomatillo sauce and fresh shredded cabbage. If interested in details let me know I'll post um.

Fish Marinade in this Order
Salt
Lemon Pepper
Dill
Garlic Powder
Paprika
Fresh Squeezed Lime Juice over the top (1 lime)
The longer it sits on fish the better
Grill the fish on a high heat about 5 minutes on each side depending on thickness of filet.

Tomatillo Sauce
Roasted tomatillos (6 or so)
One roasted jalapeno
Half a red onion
Fresh cilantro (to taste)
Whole avacado
Lime juice (half a lime)
Minced Garlic
I roasted the veggies on my stove ( I have a gas stove). Remove the skin of the tomatillos and jalapeno. Put all ingredients in blender and pulse until a creamy sauce.

I used corn tortillas that I roasted on a cast iron griddle on my stove. Cut up some fresh cabbage and used that as a garnish. You can not go wrong with this recipe. Trout should work just fine as a substitute.

Enjoy

Either sweet or savory on mine. We use a locally made habanero, mango and pineapple salsa or my wife's homemade red salsa. It's some good shidizzle!! That's about the only way my wife will eat fish, so I cook it like this alot.

I usually use grilled or blackened fish. It's whatever's in the freezer. Dem Skrimps grilled or blackened ain't bad either on a taco!!

Make sure you got a cold Corona or Dos XX w/ it.

2 1/2 tablespoons mayonaise
1/2 teaspoon cumin

I am going to make a sweet/hot sauce and a more tomato based salsa type sauce also. My neighbor has a lime tree that just so happens to be dropping a few limes in my yard every week Guy is a great neighbor, earlier in the year the satsumas were falling in my yard

Gonna sorta steam the shredded cabbage just to make it a little tender and then will have some poppyseed dressing for that on the side. Grandma used to make coleslaw with that stuff and it is perfect. \

Be careful with the limes.........lemons don't get ripe until Dec. The limes could be very bitter this time of year.
