Picked up some fresh AJ and threw together a quick carbanora. Finished up drying some panchetta last week and used that for the sauce.

Carbonara is a cream sauce thickened with raw eggs. The eggs are whisked into the cream and it thickens the sauce similar to how eggs thicken pudding. I love to make it with red onions, tasso, and wild oyster mushrooms.

Oh salty nurse I forgot say it looks great. I just pulled some tasso and mushrooms out the freezer. I haven't cooked it in years.

Looks good....... Where did you get your asparagus? All the ones I find in the grocery store are pencil thin.

Matt, I'm not sure but I think it was from albertsons off ambassador. My wife usually does the veggie shopping.
