Default Eating exotics

Got a sweet deal on shooting a Scimitar-horned Oryx, and a couple of axis does.
Do any of you guys know if this is good to eat couple of people i have spoke with said its good. Going to mount it just don't know if its worth the processing fee. I will have the axis processed.

Axis is very good meat,not sure about the oryx....

I would not eat any exotic dancers unless I have known them for a long, long time.









Same as Montauk. Axis is good, not sure bout the other. I don't know if anything makes bad sausage if mixed right though.

Scimitar Oryx is some of the finest table fare there is. Backstraps are about 2 foot long and around 8 inches in diamater. Cook them like filet mignon on the grill after marinating in italian dressing, worstechire, Tony's, and some mustard. We just kiled one last weekend and took it to be processed. Making sausage out of the front quarters, neck, and trimmings. Cutting roasts out of hind quarters and using trimmings for ground meat. Better thank 90/10 ground angus.

Axis about as good as you can get, too. Process same as above but use the front quarters for stew meat.

Axxis is great, Oryx is better. However, on the Oryx, make dang sure not to over cook it!!!!
