Default Wild Hogs

There seems to be a bunch of people who hunt hogs on this site. I have a few questions about them, since I am not much of a hunter, however I make a lot of sausage.

What is the quality of meat compared to farm raised hogs? I ask because I have never to my knowledge eaten a wild hog. I realize there will be some difference to the meat, but what is the difference?

Would it matter in sausage making? Since the shoulders would be ground up and mixed with other seasonings.

Is the muscle to fat ratio higher or lower for wild hogs vs farm raised?

These may seem like silly questions but I have never butchered a wild hog. I am asking because there are a bunch of them on my wife's family land in MS and my brother in law wants to start killing them. So I figured it would be a good use for the meat. Any information would be greatly appreciated. Thanks in advance.

I don't know how to answer your questions but, I'd be glad to help you with eradication! Really, it depends on the vegetation(their diet). I've eaten wild hogs from this area as well as from central TX and the difference is night and day. The hogs in this area had a much better flavor and higher fat. I was told it was due to a better variety of food.

I'm sure FinFeatherFur could tell you much better than that but, that is my little bit of knowledge on the subject.

I recently made sausage with wild pork. I used 30 pds wild and 30 pds domestic pork. The wild pig is a leaner meat so I used pork picnic. It turned out great with no difference in taste. It also makes a awesome gravey. Just make sure you kill a med. size one or smaller.

once you start eating wild pork you wont buy store bought anymore. best eating ones are no bigger than 175. sows are a lil better. after you clean and quarter it leave in ice chest with ice for at least 4 days draining the water and adding ice. this gets most of the blood out of the meat making it not as gamey tasting. wild pork is one of the best eating imo.

def.. mix your wild pork with store bought, my mom an dad use boston but with there wild pork and deer...comes out awesome, with a lil more secret amounts of seasoning also.., the wild pork by itself does make a very good gravy.
