The Roux (Cooking/BBQ/Recipes) What good is a cajun site without a cooking and recipe forum?

Default Citrus Grilled Chops

I tried something new with some pork chops last night. Real easy and off the charts good……. I marinated them all day in a soy sauce and orange juice marinade then grilled them on the pit. I threw the leftover marinade in a pot and cooked it down with a couple tablespoons of some blood orange marmalade to make a glaze for the chops. A lighter version of bbq. I also made a pretty legit pasta salad with some zucchini, squash, and cucumber noodles. I threw together a tequila and lime vinaigrette to put on it. The vinaigrette needs a little tweaking, but I’m on to something with it. Also need to work on the noodles. Next time I'll just blanche the zucchini and squash. I boiled them a hair too long.
