I had some leftover BBQ pork chops that I've been eating on the last 2 days. I was getting sick of the same old thing so I chopped it up and made some gringo al pastor with it. I had some cabbage so I figured what the heck. Throw that on too. Poured on a little lemon vinaigrette I had left and voila! Gringo al pastor. Definitely not authentic, but I left the table happy.
