Yesterday was my oldest daughter's birthday and instead of traditional cake she requested a pumpkin cheesecake so who am I to argue about what she wants. Lol.......
So Friday evening I made the cheesecake and yesterday I made homemade whipped cream to top it off with.
It didn't come out looking like I wanted or expected it to but i's a pretty darn delicious cheesecake. The pumpkin gave it a little coarser or less smoothe texture in appearance but it tasted better than I thought it would with not a strong pumpkin flavor but you can tell it was pumpkin. The graham cracker crumb crust had a nutty toffee flavor that makes you want to sneak a lil more from the cake.
Oh, I forgot to mention I had toasted and chopped pecans to top the whipped cream with but I forgot to add them to my slice.
