usually......a good boil and stirring constantly for 7-8 minutes does the trick.
turn the heat down, cook for 25 minutes.
if the rice split you can clearly see it.
if you have some water still on top.......do not stir it in.........skim the top.....save that for dipping white bread in.
flip the jambalaya and all should be good
I do the same with cooking regular rice
