He applies ink directly to a fish, shading and coloring appropriately, then presses paper to it to make a relief print in actual size. Sometimes he'll do hand coloring and shading after, sometimes it's all in the application. It's really cool looking

Some people were coloring red fish with black paint then pressing paper on them and selling them for 20 or 30 $ at venice marina a few years back.
