Ok, Mat hows this sound? rub with Steens dry rub with 1 pt coffee 1 pt Cajun seasoning and 1/2 pt light brown sugar. I was thinking 2T, 2T, 1Tblesp would do 3 pork steaks?? May hatch that plan tomorrow if it sounds right.
