Definitely on the bone...I recently got engaged to a wonderful woman from Baltimore, MD.
She has 3 kids at home, 8,12, and 15...they had never had bream deep fried southern style!!!
I had a blast teaching them how to eat the fins and how to eat around the bones...of course you keep a loaf of bread close...just in case!!
