Default Deer and ribeye sausage stew

Digging through the freezer I found some deer meat I had forgotten about and a some ribeye sausage to boot! It's been a while since I had a good stew so I decided to scratch the itch.

Got the sausage and deer meat browning....

Sweated the vegetables and added the meat back to the pot. Filled the pot with some coffee and beef stock then in the oven for a few hours.

After about 2 hours I pulled it out of the oven and took out about a cup of the gravy and mixed it with some flour and added it back to the pot to thicken the gravy up. I let that slow roll for about 30 minutes. I had some potatoes but decided I wanted them to have a little crunch instead of stewed with the rest of the vegetables. I coated them with olive oil and tossed them in a seasoned flour mix and popped them in the oven while the gravy thickened on the stew. They had a crunch outside and a soft inside. Perfect for sopping up the gravy!
