I have kept them whole, gutted & scaled. Put some score marks down each side. Rub with oilve oil and season inside and out. Lay fish belly down (belly flaps open) on the on the pit. Baste with garlic butter until done. As someone else stated do not overcook because it will dry out. Just another cooking option to try.
