Made about 45 for a get together. They look dark but I roll them in brown sugar and chili powder. One hour in the smoker at 275 degrees and 10 min in convection oven at 400 degress. 3 lbs Mexican mixed grated cheese-- small pk of old smokies cut long ways--1 1/2 pks of cream cheese--small bundle of green onions and 2 small shallots chopped fine and 1/4 tsp of creole seasoning. Nuke the cream cheese 20-30 seconds to make it mix easier.
