It just isn't that hard without the golf ball. The trick is to hang 'em on a pulley, unzip with a good knife, use a pair of pliers to get started on each leg, and raise the deer on the pulley while you go so you're always at a good working height to put your weight into it. The shoulders and neck are much easier if you get them to a good working height. They are also easier to skin if you don't split the breastbone or ribcage when gutting. I learned to reach up into the chest cavity and remove the heart and lungs from the abdomen leaving the breastbone in tact until after skinning.
