Vacuum sealer is definitely the way to go. I have a Food Saver brand and I love it. Vacuum seal all my fish, deer, ducks and whatever else. I fix a little pile of fillets on wax paper and put it in the freezer so it can firm up and glaze over. I then cut the size bag needed, mark the bag with a sharpie identifying contents and date and seal it up. By pre-freezing you eliminate the moisture that can interfere with the vacuum suction and seal process.

That's a good idea with the fish. I find ducks will burn on the inside if you don't use them Before the next season. I leave them in the packaging they come from the cleaner. She Wraps them in Saran Wrap then freezer paper. When I get them home I vacuum seal them in packs of 2.
