I fix a little pile of fillets on wax paper and put it in the freezer so it can firm up and glaze over. By pre-freezing you eliminate the moisture that can interfere with the vacuum suction and seal process.

Great Idea! I'll have to try that. I recently got the Game Saver by Food Saver and like it. It's taken a little trial and error to figure out how to get all the air out. Putting less filets in the bag seems to work better. IMO they surely taste more fresh than fish frozen in water.
