One of my favorites is to use shrimp Etouffee as a sauce to put on top of fish. It is very similar to what several others have posted.
We make up a big batch of shrimp etouffee and keep it in the freezer. I does not last long in the freezer because the wife is always wantin to take some out when I fix some fish.
