My grandmother used to make the best crawfish bisque. Back in those days most women did not work outside of the home. If it took a whole day or a day and a half to make it...well she had time to fix it. No one has that kind of time anymore. It's hard to find an old fashion crawfish bisque like the old time Cajun people use to make. You will not find it in a restaurant.
The Junior League of BR used to print a cookbook called River Road. It would probably have a receipt in it. Another place I would look is on the WAFB web site. They have a section there with a long list of Chef John Folse's receipts. Might get lucky.
