After a few hours of debate....
I decided on wrapping the doves from yesterday up in bacon and cooking them tonight rather than making a big pot of dove and gravy. The decision was made when my grandfather said why smother something that good in gravy?
The point was taken, and the gravy will wait for the tough squirrels in a few weeks
